are there any other tones besides rock and metal that you can get by using an EMG 81/85 setup?

Not really, IMO the 81/85 combo sound stale and too bassy.

mine are 18v modded, 81/89.

and i think i get pretty nice cleans and cruch sounds.

Actives(especially EMGs) are WAY overused, Seymour Duncan, Bareknuckle and DiMarzio are the way to go IMO. Lace sensors are VERY nice single coils too

they can achieve plenty of tones, but if hard rock/metal isn't a large part of you're playing, you'd be better off finding different (probably passive) pickups.

I have a peavey vypyr 30 and a roland cube 20x.
I play alot of rock and metal and i'm trying to get a ska sound out of my guitar.

EMG's are the exact opposite of what you want, look at some P-90's or some p-90's that fit into humbucker slots.

Basically any music except for very high gain stuff like death metal and doom metal. It does best with classic rock, ska, country, acoustic sounding, punk, reggae, rock, most prog rock, and a lot more music.
