I did not find anything on the net talking about mixing heads and cabs.
The head is a 100W tube amp and the cab is a 200W RMS.
I'm just wondering if I can cranck it up to the maximum without worrying about breaking my cab.

You're not truly playing guitar unless you know theory.
The AVT cab is likely to be rated at 4ohms, the Line 6 at 8 or 16. Also, AVT stock speakers are muddy and flabby sounding.
