Should I use my 15 watt amp line-in to the computer, or my crate v33 with the video cam mic???
And if I use the line-in, how do I sync it to my video

NO

and for syncing to video, just use Movie Maker or any kind of video editing software.

if that is all you have, then I suggest you do that, yes.

EDIT: then again, why not just try both out?

I think you should try both, but you're more likely to get better results via amp to computer unless your computer's audio hardware is shit. If that's the case, your recordings will probably have a lot of excess noise and sound like shit.
