When you guys practice scales with a metronome, which setting (3 notes per click, 16th notes, etc) do you practice with the most? Is one more beneficial than the other? Thanks.

start at a speed which is comfortable ie. you can easily and cleanly play at, then increase when your confident, practice till clean and easy.
rinse repeat.

i'll usually start with 1 note per click (quarter notes) then go to 2 (eight notes) then 4 (16th notes) then back down, moving up the speed as i feel comfortable,

with arpeggios too

I started out that way to. Now I'm playing 16th on 290 comfortable.

Great way to gain speed

That's what I do as well.
Helps develop control and knowledge of how to play in different timings.
