So i can sort of pick out some basic chord sounds in songs and can find out the general progression if i go through the scales to find what key the song is in, but how do you start picking out actual riffs and individual notes in a song?

It shouldn't be too hard to find the starting note of a riff. Just play a note. If your note is too high, keep going lower until you find the note you want to start on. You should be able to tell if the pitch goes up or down, so just go on from there.

I suggest If you're new to this, try to figure out really easy songs by ear. And I mean, REALLY easy. The birthday song, mary had a little lamb, etc., just to kind of get a basis. Then learn simple single note and powerchord riffs.
