I was eyeing up the Yamaha CPX 700 for a possible upgrade from my starter accoustic guitar. I have been searching a few Sam Ash store locations but can't find one in stock to try. Looking for someone who owns this guitar and their thoughts.

Mostly Unplugged. Went to S.A. this weekend, but none of the stores in NY carry in stock. I looked at CF Martin DC1XE, it was more expensive but nice sound. Everything I read though was negative because its not completely wood. My other option was the Seagull S6. Any suggestions? Price range is $400- $700 max.

Seagull makes some wonderful guitars. Canadian made in Quebec so the quality is top notch. You could also take a look at Guild's GAD series as well as Epiphone's Masterbilt series.
Equipment:

Does the Seagull original vs the thin neck have a considerable difference in sound? Looking for some bass but nice bright sound on the higher strings.

No. There might be a measurable difference, but certainly not an audible one. It's all just preference.
