hi guys, if anyone can help out with this it'd be appreciated greatly,
have an epi les paul, got given a couple of gibson pickups, easy upgrade methinks, controll cavity comes off and the wires coming off each pick up are split into two, (wired to the volume controls) I'm ok this far, then I grab the gibson pickups and theres a grand total of one wire coming off each, wheres the other wire? what does it do? how can I wire these up? I know absolutely bugger all about the electrical side of things as you can probably tell

anyone help?

That "one wire" has two conductors, inner and outer.
Like in the example in the top of this photo:

yeah thats it, so what needs to be done with the braided sleeve? basically that needs to be thought of as the other wire and soldered to the pot somehow or...?

sorry, like I said, I'm a beginner lol

Yes, you can solder the braid itself to the pot casing.

Solder the braid to the pot casing-it's the ground.

Just make sure not to solder the wire.

You CAN play anything with anything....but some guitars sound right for some things, and not for others. Single coils sound retarded for metal, though those who are apeshit about harpsichord probably beg to differ.
