I've never heard of doing this before. Doesn't this kill your amp?

I've seen that before.

Not sure if that's really true though, because with a cab plugged into my old 5150 combo, it sounded just as loud through the combo speakers as it did through the cab

I do that with my Vetta and it's a VERY noticeable difference in loudness between the combo speakers and cab (running at 16 ohms, half wattage).
