or is it just the Diminished and Dominant(V) that will change places

Close. usually if you dont have the degree symbol, id use a star to indicate diminish, so
Major - I ii iii IV V vi vii*
Minor - i ii* III iv v VI VII
that way you dont confuse minor with diminished.

now you cant start from the 6th degree of a C Maj and get a C min scale or chord's if that is what you mean. i don't know if i understand your question right.
