Carol of the Bells ftw! I do a version where I set my delay to be a measure behind what I'm playing so I can get some of the harmony and backing parts with one guitar.

I have an entire book of Christmas songs arranged for solo jazz guitar. I'm going to pull it out now. I'd say my favorite one in there is probably "We Three Kings," since it has an awesome little riff/vamp as the intro, and in between stanzas.
