Changing tubes is a new thing for me, so sorry if I sound stupid.

In my Fender Blues Deluxe, I'm replacing two white (rating "7") Fender Groove Tube GT6L8B's with two Fender Groove Tube GT6L8C's, and the three 12AX7 preamp tubes with, well, three 12AX7 preamp tubes.

Now, it was only today, when I picked up the new tubes, that I heard of biasing.

Since the color (rating) of the groove tubes are the same, but since one is a "B" and the other a "C", do I need to adjust the tube bias?

You should always rebias when you change power tubes.

BTW, GT 6L6b's are just relabeled Sovtek 5881s
