So I'm starting out on a bit of two handed multi-finger tapping stuff. You guys probably know what I'm talking about, but for those who don't, it's just when something is played in one position on the fretboard, but nothing is picked, it's all tapped out. It almost always involves multiple strings (3-6 usually), and sounds really cool if done properly, eg: Joe Satriani's "Midnight", or Steve Vai's "Building the Church".

I figured I might as well mention the latter song early, as it is mostly what this thread is on. I tried learning the intro to Building the Church, but for some reason I always get a lot of pull of noise and I can't figure out how to fix it. Here's a video of Vai playing it properly.

Any help on how I can minimalize string noise WITHOUT stuff like hairbands?

well, because he's playing overhand with his fretting hand you can lay your pinky across the strings to mute noise and use the other 3 fingers to tap with.
