i'm installing new strings on my guitar and i'm wondering should i reset my intonation paddles to the default (middle) position when putting on new strings so i have some room to tweak them as atm they are mostly all the way up and i'm wondering if it will make any difference to the new strings intonation if they are moved

If your're putting the same gauge of string on as before you shouldn't really need to reset the intonation but if it needs doing just leave the saddles in the same place.

of course, it'll make a difference. you set the intonation by basically adjusting the string's length. ..and moving all the saddles to the middle is changing that.

you're better off putting the new strings on, and adjusting the intonation and action after..

what kind of bridge is it?
