personally i would go with SRV pride and joy. try it with humbuckers but it def sounds different with a strat. (it was hard as b*lls to learn well though. atleast for me)

Cranking your amp with little gain, so that the overdrive is all from you forcing the amp to get that way while you have your strat set to the bridge pickups. This song sounds great like that.

But I'll also suggest, "Who Knows" by Jimi Hendrix, not just a great song for your strat, but a great jam song, if you have a bassist and drummer, this song can be immense to just jam for ages on.
Also, Cosmik Debris by Frank Zappa, I've found, sounds really cool played on a strat (providing you're dialing in that "classic" strat sound).
