I am palm muting it but every time I pluck a string I hit the string with my fist

So stop doing it.

Practice properly rather than launching straight into spazzing your hand at the strings in failed attempt to play fast.

Are you holding your pick and plucking correctly?

explain the process you use to me to play a note.

Ok, hold your pick like you're making an Ok sign and then press your middle, ring, and pinky together.

I like to do complete mutes with my hand and lift when not.
Everyone does what you said.
just practice controlling your muting.
