Is there software for the Mac that will transcribe what I play into the computer from my guitar - as I play?

I don't think that's possible. There might be something, but I doubt it. But if you want to transcribe by yourself, I strongly recommend Guitar Pro. It was developed for PC, but now there is a mac version. It takes some time to get used to, but it is still easy to use and is very flexible.

There's a program called melodyne that detects the actual pitch of a note but it only works for vocals really. It can't get any better than that these days, though.
