Sometimes when I switch to the bridge pickup of my LP, the output seems to cut out to about half. It doesn't come back unless I strike the stings relativly hard, or flick the switch around a little bit.

What could be causing this, and how would I fix it?

The mechanism of your pickup switch will need adjusted.
or cleaned(less likely)
It's hard to describe it as such, but open it up, take it out and observe it.
I went at it with a screwdiver to move the contacts further or closer to the middle..
that is to say that you have the same mechanism as me.
On playing the Paul Gilbert signature at the guitar store extensively, my missus sighed:
