I also have my interview/audition for college in a couple of weeks. Mine includes playing a piece of music (cover or original), a 30 minute, grade 5 theory test and a one-to-one interview.

I'm doing a lot of slower, metronome-based practice; I want to play well, not flashy.
I'm also re-reading through a lot of basic theory stuff again.

What are these different grade theory tests? I've heard of them here, but I'm not really sure what they are.

grade 5 is pretty much the standard requirement for university level popular music courses. For classical they want grade 7-8.
