Ok so I have very little experience with trems so bear with me. I know that when you do double-stop bends and unison bend with a FR, they go out of tune. My question is: Do strat/wilkinson trems have that same problem?

I'm thinking no, or very little if at all. I just tried on my RT450 which has a strat style floating bridge and couldn't see the bridge move at all or hear the E string pitch drop when I bent the B.

If its floating, yes. If its flat against the body, and the springs are tight enough, no.
The Wilkinson is usually set up to float, so it will.
