Technically you are right. But my god man, lay off the semantics.
They are called power or fifth chords. Everyone can unserstand what that means, and as music theory is a language to communicate musical ideas what does it matter if they are or are not technically chords in this context?

In any context they are not chords.

You don't call C to E a chord do you? No. It's an interval. In the same light, C to G (i.e. a power chord) is NOT a chord... but an interval.

Chord tones can be omitted without damaging its musical effect, even the 3rd can be ommited in some cases.

Of course the context matters, its all descriptive.
If I were to say I want you to paint a picture and main colour should be red and yellow mixed together it may be somewhat confusing to someone who doesn't know that I would mean green.

Like wise if I went into a band of people who were not all that well versed in theory and said "I'm playing a song using a bunch of 5th diads..." it would be a lot clearer if I used "I'm playing a song using a bunch of power chords...".

Like I said, I know that technically a chord has to contain at least 3 seperate note values (i.e. a triad or more) but in context, these diads can be classed as chords and aslong as everyone understands what they are it shouldn't matter.
