What should I do with these? I have 2 peices of alder that are cut offs from my tele project. Feels like a shame to waste it. What does the UG community usually do with them?

Save them for inlays, dye test, jigs, humbucker rings, covers, etc.

^ + 1 I save as much of the off cuts as possible, you may need to use alder as 'ears' if a body isnt wide enough, or if you f**k up the edge when routing or something, the same way you can use maple offcuts as ears on a headstock, maple is also good for clamping cauls.
