Hey UG!
Could anyone please explain to me why my guitar is so mellow sounding? It's not just your average mellow, it's possibly the darkest most sad sounding guitar I've heard.
It's made of queensland maple and spuce - solid body and sides btw.

I don't know much about acoustic guitars, but maple and spruce are - from what I know - quite bright clean sounding woods...

was your guitar always mellow? if so, chances are the build is what dictates the sound. while maple can be a very bright wood, one of the gibson jumbos i've played has about the bassiest sound every, and it's maple - guitar shape and bracing strongly affect tone.

if your guitar was not always mellow, it could be your strings or the humidity where you keep your guitar.

It was always somewhat mellow, but it's just gotten moreso over time.

Although there was this one day, where I left it in its case next to a window for a day... it's never sounded quite the same since then either.

DR's are very bassy strings. When they get older, I could very well imagine them becoming mellow sounding.

definitely change the strings. not only is it a whole lot cheaper than buying a new brighter-sounding acoustic, but you'll probably be surprised at how much a string change can make. i don't know what to recommend, but i guess i'd start by looking for some nice round wound strings.
