Simple answer: because of the notes/intervals they use.

Major keys are not always happy and minor keys are not always sad.
Only play what you hear. If you don’t hear anything, don’t play anything.

because minor doesnt mean sad and major doesnt mean happy. many things factor into what the song "feels" like. besides, in any key you have major and minor chords. so even in a major key you can use sad sounding chords. plus how the melody goes with the chords behind it can change the mood. theres a bunch of stuff really.
