Should I buy an Epiphone Les Paul Custom and upgrade the pickups, or save up for a Gibson Les Paul Custom?
And if I get the Epiphone, what kind of pickups should I use?

Yeah don't rush and get the Epiphone, definitely wait until you can get the Gibson, it'll be worth it in the end.

Pickups arn't the be all and end all. You need to also take into account wood and build quality.

I'm curious, what're the main differences?

Is the wood, finishing, etc different?

The reason I'm asking is that I've also wondered if I could get a better bang for the buck by buying an Epi and then upgrading it.

Don't the Epi Customs run $500 and the Gibson Customs run $2500?

I couldn't tell you the differences but there must be some huge reason rather than the name.

Its like comparing mayonnaise to shoes.

Its more like Epi customs run $700 (with pickups and all about $1000) and the gibson customs run about $4000 :P its ridiculous.

In that case I would just get a black (I am assuming you want a black one. I may be wrong) LP Standard or Traditional. It cant really be worth the extra 2k for the headstock logo, gold hardware, and binding can it?

EDIT: Another idea is you can get a Black Standard, and upgrade everything to gold hardware and that would only run you another 500. You would save a grand.

Yeah, I'm a great sax player though, so I plan on picking up a little cash there by teaching lessons, and maybe guitar and piano lessons too. So maybe I can afford something by 2012 :P My gear sucks, and I'm in a band, with the worst stuff out of all of us, and I need an upgrade.

Definitely save up for the Gibson. I've bought my LP Custom about 6 years ago, and it was the best purchase I ever made. You will not be disappointed by the Gibson.

i'd say get a gibson sg. they're only a little bit more expensive than and epi les paul. but that's just my opinion.
