So 11-52s or 12 54s. If I had a gun to your head and said pick one which would you go for?

If I were you, TS, I'd go 13-60s. Why? Cuz at Drop B, you'll have a hell of a time keeping 11-52s or 12-54s in tune. Besides...when tuning and playing that low, imho, it'll sound better if you have the thickness (tonewise) of a 13-60 set.
And please stick with one tuning only also, and don't forget to adjust your truss rod before you tune. (A side note: If you wanna keep your guitar's neck from warping, you'll have to adjust your truss rod every single time you retune from Drop C to Drop B and visa versa.)

^ They will do, but I run in Drop D with my string 10-52's where i could easily run them as .9's.

I run heavier gauges because the tone is fatter, and more aggressive i feel.

Also, whenever i play a guitar with 9's or 10's on it, I can squeal like a pig

I use .10's for drop B
The other guitarist in my band uses .09's


Experiment, just set your truss rod correctly

I would go for some 52 14 or 13
