Middle C on a guitar is 3rd fret on the A string. But I thought the pitch you have to hit to hit middle C for vocals was first fret, B string.

Correct. Guitar is a transposition instrument. The note you read on a sheet of music actually sounds an octave lower. Middle C on a sheet of music is played 3rd fret on the 5th string, but actual middle C is on the first fret, 2nd string.
Only play what you hear. If you don’t hear anything, don’t play anything.

I'm a tenor and I usually start warmups from the low C up to about a G or A above middle C
you can go down to an A or so as long as you dont force it, do you know your vocal range btw?
