compared to the crazy soloists I hear in metal/jazz bands the stuff this guy is doing at 2:52 doesn't seem that complicated.

However, me being a complete newbie at theroy, I have a lot of trouble making my mini-solo sound as good as his. Can somebody give me a brief explanation on how to make a 30second improv to this song?

I can tell that this song is rooted in G, but he's doing it in Bb (by putting a capo on the 3rd fret) and the chords are Bb Eb and Cm, which he's getting by using the G C and Am shapes with the capo on the 3rd fret.

I suck at improv :[

It's just hammer ons and pull offs based on the chords.
Only play what you hear. If you don’t hear anything, don’t play anything.
