What would happen if I were to change tuning on a floyd rose and not stabilise/balance the bridge at the back? The tuning would be half or full step down.

The tuning would be fine. You're bridge however would be either sunk in or floating way too high.

So whats the result of that? Could it cause any damage or playing difficulties?

It makes for an overall tougher time maintaining the tuning, and I personally found greater risk in breaking strings, or strings coming out of the Floyd Rose whenever I poorly set mine up in the past. It's best to just dedicate 40 minutes of your day straightening out your Floyd Rose, it makes a huge difference.

It could cause both. However it's easy to level out the bridge using the 2 screws on the back of the guitar.
