If i am using a I ii IV I chord progression in the key of g can I add variations to these chords and keep the song in the same key? For example would i be able to use a cadd9 and keep the song in the same key? sorry if this is a stupid question its really confusing me

Well ultimately if it sounds good it's right, but you could look at the notes in the chord and the notes in the scale to determine if it 'fits' in that key. So C add9 Has C E G and D and the key of G has G A B C D E F# G so yes C add9 would fit in that key.
When altitude dropping, my ears started popping. One more red nightmare...
