I don't know if there is thread about this already (I did look), if there is point me to it.

My problem is this, I have Audacity and Cool Edit Pro but no interface. My only recording device is my Flip camera and as you can see from my videos http://www.youtube.com/user/modestguitarist

the quality isn't great because I record with the track or backing track as well. Would it be better if i played the track through earphone and just recorded the guitar, and using software to just lay the tracks together then sync it with the video?

Would that improve the quality of my recording?

Yeah if your playing both the track and your guitar out loud, the overall recordings not going to have good volume.

Definitely play the song in your ears and then just synch it up in a program.
This way on the video file you can turn down the song if its too loud, and we'll be able to hear your guitar properly

get an interface - you'll be amazed.
Now running an Eleven Rack with Pro Tools 10.3.3 - it's amazing and I'm having ball with it - worth every penny. PT 10 is tops IMO and the Eleven Rack is a work of art!
