How do you play a dead note if it is played the exact same way a harmonic is played (lay your finger on the string, strum)?

It has to do with how much pressure you put on the strings. Harmonics are played with a lighter touch

I find that usually harmonics are done with one finger where dead notes I tend to have at least two fingers on the strings to prevent the harmonics from ringing.

i told you already, and take what i said and do it. if you just want one individual string, then just do what i said except pick the one string. easy as that.
