I tend to enjoy every cover of a Bob Dylan song more than his original. Huge respect for his writing ability, of course, but his voice doesn't sit well with me. I'm talking mainly about "Knocking on Heaven's Door" (GNR), "All Along The Watchtower" (Hendrix) and "Mighty Quinn" (Gotthard)

The cover of Hallelujah by Pain of Salvation is my favourite, although Myles Kennedy's acoustic version comes close.

Then we've got:

Sepultura's cover of 'The Hunt' by New Model Army that they did for Chaos A.D. I do like the NMA version but I think Sepultura pull it off superbly. One of my all time favourite Cavalera songs.

I prefer Machine Head's cover of Hallowed Be Thy Name, though I love both versions.
Fear of the Dark by Mystic Prophecy (?) I think the band was misnamed on the covers CD.
Bodom's cover of Aces High comes close too
