Most viking metal doesn't deviate from melodic death metal too much, it's just what the songs are about that make it "viking metal." Now if you're talking about folk metal, that's completely different.

Violins and accordions seem quite common in this genre. Using a kantele would be awesome as well.

EDIT: Maybe I'm mixing this up with folk metal. I'm not too into these genres.
