I really want some songs to challenge me, I'm feeling like I choose good songs that are simple and i'm not expressing my full potential.
I'm looking for Guns N' Roses, Poison, and songs from bands like that with really good and slightley challenging riffs and solos to learn.

If it has to be that decade/genre, then Queensryche has some good stuff. Racer X actually if you havent heard of them is probably the most challenging guitar in the full hair band 80s setting. Check out Racer X

whole lotta love- zeppelin. great riff, great solo, simple song that gets right to the point.
perfect crime- guns n roses. fast pace, awesome riffs, insane solo, down and dirty hard core rock song.
speed parade- slash's snakepit/ aint life grand album. fast greasy ass kicker with a really good solo.
dime store rock- slash's snake pit/ it's five o'clock somewhere album. blues rock ass kicker with a good solo. easy riff too.

Corpsaria - Architect of Malevolent Visions - One of the few metal songs i have ever heard that features over 4 riffs that are all just as kick ass!!...the soloing is shredy as hell too.

Motley Crue:

Dr. Feelgood and Too Young to Fall in Love are some of the more difficult Crue riffs to play as far as speed goes. Mick Mars is a hugely underrated guitarist, he has plenty of mean riffs.

-You're Crazy
All of these are some of Izzy Stradlin's best rhythm guitar work.

This is kind of different from the other bands mentioned above, but I'd suggest Atman by Rodrigo y Gabriela.

This one riff that goes somewhat like this on the A and D strings-

is the first thing I play every time I pick up a guitar. It's just so good.
The rest of the song is moderately difficult but hard enough to be considered challenging.
