Well, Bruce Springsteen has been known to do a great acoustic version of "Born to Run".

A point of trivia; at one time, a grass roots campaign was started to make, "Born to Run", the official New Jersey State Song. (Or perhaps it was the unofficial, official state song, the NJ legislature didn't approve of the lyrics, and never voted on the proposal).

If you'd consider something going the other way, (acoustic to electric), Judas Priest does an outrageous metal version of Joan Baez' folk song, "Diamonds and Rust".
