I happened to notice in a few pictures of other people's bridges that the direction a few of the wedges face is different than my layout. Here is a picture of my wedges:

In these pictures i saw, people had them setup where the top 3 strings were facing one way, and the bottom 3, the other way. What is the purpose of the different direction these wedges can face?

Turning the low saddles around provides extra room to adjust the intonation of the heavy strings. It’s standard practice in many guitar factories, especially in Asia.
