Guitar Pro 5 and earlier only allows up to 7 strings per staff. To tab an 8, you'll need to upgrade to GP6.
On the songs where he plays an 8-string, the tuning is drop E: E B E A D G B E.

It'd be extremely difficult to drop-tune a 6-string to match the pitch of an 8-string. Having said that, there are many different tunings for 8-string. If I'm not mistaken, Tosin has his lowest string at an E. Making 3 of 8 strings all E at open position. Most tuning I think are standard 4ths between the strings.

On GP5 you'll need a separate track for the 8th string. Just put the two tracks on the same MIDI bus and you can have more tracks without taking up too much room.

On GP6 you can go up to 12 strings, if I'm not mistaken.

He uses Drop E (EBEADGBE) exclusively.
