So I know things have been added ever since music has existed :P but I was curious how I might go about finding the main people or periods responsible for shaping the music theory we know... such as first using scales or coining the terms we use to describe it..

I am sorry if I don't make sense.. basically I want to know the history of music theory.

Look at Pythagorus, Fux, and Bach. Having said that, there are MANY ancient Greek cities that found different things so it might be best to find one specific source that consolidates them all (Fux attempted but messed up and that's how we got our current music system, ironically).

Lots of people have contributed to it from the earliest of time.

Theory has been around for a very long time. In terms of western music, basically since it started.

To give a more concrete answer, Rameau, with his Treatise on Harmony, is probably the biggest historical figure in terms of codifying functional harmony as we know it and being the basis for modern theory.
