For Recording to sound good do I need an Amp with a Head and Cab or can I use a small one?
As long as the amp you are using has good tone to begin with, it will sound good on a recording. Size/form factor do not matter. Bigger cabs will give a different kind of sound, but that doesn't mean you need a bigger cab to get a good sounding recording.

Though when I record I like having a head/cab simply because I can keep the head nearby should I want to change settings, and have the cab mic'd on the other side of the room so I can hear the track better through my headphones.
