Joe Bonamassa & Robin Trower tour with a band being the only guitar player. Their studio albums however contain multiple guitars here and there. So is 1 guitar on the albums required, or do you mean live?

An Endless Sporadic, it's a two man band, but I guess they really use 2 guitars.

Mr. Big, though it's difficult (but not impossible) to play like Paul Gilbert, and the bass goes crazy.

I'm not completely sure, but Animals As Leaders may have a few songs with only one guitar, but I know a lot of it has two.

Bear in mind that even if they only have a single guitarist, most will use multiple tracks on their recordings and will usually have a session musician filling in the extra parts when they're live.

Aside from that, I think most of the ones I could think of have already been mentioned, except for U2 and Poison so I'll add them to your list.

Protip, the guitars will be doubled up on the album anyway, some bands even have stage guitarists that don't play on the album just to play the parts.
All I want is for everyone to go to hell...

My favorite bands are those typically with one guitar... And drums.

Local H, The Black Keys (thickfreakness and Rubber Factory are outstanding), and The White Stripes.
I am not sure if I like the simplicity of not drowning in noise or what. Not that I can't appreciate extensive noise either, but I keep coming back to the two person bands.
