I'm documenting my trek across Europe in the spring with a camera, and I'm looking for documentaries about people who made it themselves. ie, didn't have someone else holding the camera.

Alone in the Wild is the only one I can think of.

Are there any other good examples?

there's Grizzly man which is kind of half what you want, Werner Herzog just took the footage and edited it into a movie and added interviews.
Maybe the long way down and long way round ones with Mr Mcgregor (Obi-wan) and his friend.

However, Grizzly Man may be a good one to see. Although it's abit different.
