Basically the same way they work for piano. Something that allows you to "hold" a note or chord with the pedal, and then play other stuff on top of the held note.

I guess kind of like a real time looper.

The Boss ME-25 has a freeze effect also. Might not be as good as the EHX but it works with the expression pedal, which allows you to fade it in and out.
