I've been playing guitar for a while but my guitar teacher just now mentioned that I am not using my wrist very much and it would be easier to play faster if I were.

Is this really true? If so could some one show me a video so I can see what it should be?

Another question is planting, in my opinion I can play faster when doing so, is it better to hover or are there any benefits? I think this part is more preference but was never really told.

All the answers you seek are in the sticky that says "Read this" on it. As for players who both don't anchor and use almost entirely wrist-based picking: http://www.youtube.com/watch?v=xCsLV5jdWzI Just one example, there are hundreds.
