Has anybody ever used the Behringer Xenyx USB model for recording? If you have, how did it sound for you?

I used it in between my Audiobox and Firestudio. It was okay at best. Noisy preamps. But it did get the job done.

You're skill at actually capturing the sound combined with your ability to mix is going to be far more important. If you know what you're doing, sure.

Our band did our first album with most of the tracks going through a Behringer UB series mixer, though the vocals DID go through a tube preamp and the bass went through a SansAmp.

The first four songs in my profile were from that album.

Our second EP was recorded a little less with the Behringer, as I was starting to transition to some of my newer gear. But I still did have the Behringer mixer when we did the bed tracks, meaning the drums on that EP were done through it. Those would be the last three songs on my profile.

(though I'll be posting re-mastered versions tomorrow, probably)
