A good ear, a sense of melody and rhythm, and some basic theory are all insanely useful in jam bands.

To sound like Phish, just play whatever you want, in any time signature you want, regardless of what the other musicians are doing. That technique goes for the Grateful Dead as well. Good luck. Sorry, couldn't resist.
