I was just wondering, say you were soloing in A Major? Would it be theoretically correct if you switched between soloing in A major pentatonic and A major (aka A ionian)?

Yup, same way that when I am playing largely out of, say, an A minor pentatonic, I like to throw in notes from A minor (aka A Aeolian).

As said above, you're really just playing the A major scale, and skipping some notes here and there. Use your ears, it doesn't sound different (because it isn't).
And no, Guitar Hero will not help. Even on expert. Really.
