I see no reason why it wouldn't work. Though you may want to ditch the stupid quick connect stuff that the EMG is using, that's just personal preference there though really.
The biggest problem you'll have is that the 808x is an active pickup, and it appears the M8 is passive. There is discussion on mixing actives and passives in the Pickup Thread (https://www.ultimate-guitar.com/forum/showthread.php?t=1282071)

Do EMG808s need active routing like the 707s and 81-7s?

If they do, you're better off getting Dimarzio 8 string pups (They make a D-Activator 8) or Seymour Duncan (8 string Blackouts) or, like you said, the Lundgren M8s.
