I know that vocal tracks can be removed from an audio file using Audacity. I was wondering if it were possible to remove guitar tracks as well, and if so, how?

Short answer: No.

The way people mute vocal tracks relies on the fact that the vocal is panned centrally. Unfortunately guitars rarely are.

EDIT: Melodyne and similar programs might manage it, but they are bloody expensive!

If it is good guitar backing tracks you are looking for here are some links...

this site has may free BT's
http://www.guitarbackingtrack.com/

and this site you can buy quality BT's for around $4 a track
http://www.karaoke-version.com/custombackingtrack/

Wow, those sites don't look sketchy and shady at all. $4 for a BT? Or does the extra $3 go into the dubious "quality" part of that?

Oh, right. You're that guy.
