Alright guys so I had my epi les paul set up at a shop for C standard with 13's and now I'm going to put it back to E standard with super slinky's. What do I need to look for while adjusting? Minor truss rod adjustments (tighter?) and lowering the action or are there other things that I need to be aware of?

Maybe intonation. But I think you'll figure it out when you just restring your guitar. Play it - is the action as low as you want it to be? No fret buzz? Is everything perfectly in tune? If yes, you don't have to do anything.

If you paid the shop to do it they should have adjusted action and intonation already. Measure the neck relief now so you have something to compare to if the neck starts bending, otherwise you should be fine.
