The gloss has now been removed. I've heard the wood can now be affected by the sweat on your hands and humidity. Whats the best product to use to protect the back of neck?

If the gloss was removed intentionally, that does not necessarily mean that you are left with bare wood. Some people will scuff up the gloss to provide a faster neck.

What seabear70 said. It might be possible you just took the gloss off and are now left with the satin finish, no worries there. If you are down to the bare wood, try Tung-oil. I've read about people using tung-oil with great success.
